AGING / CONSERVATION

The refining of Torchiato di Fregona takes place in oak barriques and takes around one year. The barrels are left partially filled to promote the oxidation process that gives the wine, in addition to the sensory note of oxidation, the typical colour, golden with amber reflections. The barrels used are "second hand" and not new as the use of these containers is designed not to release the fragrance of the wood but to allow the passage of the oxygen. The vanilla notes that reach the nose are thus delicate and not overpowering. Refining then continues for five months in bottles.
The production of this wine on a small scale does not normally enable the carrying out of lengthy aging in the wine cellar. However, it is emphasised that the Torchiato di Fregona expresses its maximum potential after five or seven years from the time of harvest. To be able to discover this wine in the evolution notes, the ideal situation is to be able to keep the bottles for a few years after purchase in environments with the correct humidity and temperature, and especially in the dark to avoid altering the visual characteristics and flavour.
